Brian Solomon came to Cabo more than two decades ago on a fishing trip and—like many of us—fell in love immediately. He purchased a restaurant on the spot, and Solomon’s Landing was born. A lot has changed in the years since Solomon first arrived. What began as a small taco bar has grown into a sprawling Cabo San Lucas Marina restaurant with an international following and a menu so large it should have a table of contents. This is a great spot to grab a beer and a burger and watch some football or a big fight, but it’s the breakfast options we want to focus on in this review: Guy Fieri of the Food Network’s Diners, Drive-Ins, and Dives raved about the strawberry-banana French toast on an episode of his hit show, and for good reason. It’s divine. But it’s only one of many must-try items in the six-page breakfast menu. The chilaquiles were also featured on Diners, Drive-Ins, and Dives, and we can’t get enough of the green version. A new addition to the breakfast menu, the drowned eggs (huevos ahogados) are served in juicy black beans with queso fresco, jalapeños, and chopped nopales. The aptly named Benedict from the Sea is like a benediction with two poached eggs, hollandaise sauce, Jack cheese, and sautéed shrimp. Have a sweet tooth? Try the cinnamony apple waffle that comes topped with warm apple compote and fresh whipped cream.
