The Los Cabos region has exploded since Sammy Hagar first opened his now-iconic nightclub back in 1990. What drew people to this oddly placed spot in sleepy Cabo San Lucas? The expertly curated music lineup and bar were great reasons to come. One of the region’s most popular events is Sammy Hagar’s annual birthday bash, which this year includes four days of festivities. These are epic celebrations featuring music, drinks, food, and more. Of course, Cabo Wabo’s continued success is due in no small part to an awesome kitchen that features a rock-solid menu. The open patio bar serves beverages and snacks, while the upper terrace features dishes for lunch such as the famous lobster tacos or the Waburrito, a huge burrito stuffed with chicken, tomatoes, and cheese. Planning dinner before a night at the club? Start with pan-seared sea scallops served with Cabo Wabo tequila butter or vampiros (crispy corn tortillas piled with Oaxaca cheese, refried black beans, and grilled beef fillet). The chile-and-cream-cheese-stuffed mushrooms are another favorite starter. The entrée menu is compact but mighty. It’s headlined by a lobster burrito (sautéed lobster, onion, tomato, and garlic are deglazed white wine and finished with heavy cream). Other standout main course options include jumbo shrimp in a cilantro-honey glaze and the pan-seared beef tenderloin.
