Here’s our go-to plan: Start with the three-cheese queso fundido. Three cheeses and tequila are flamed in a molcajete and served with fresh tortillas. Follow with a pumpkin flower soup, especially if you’re visiting Los Deseos at night with a cool breeze over the marina. The chile en nogada is a beloved tradition; essentially, it’s a poblano pepper stuffed with minced pork, beef, and dried fruits topped with a nut and pomegranate sauce.
