The Triple Threat Sunset da Mona Lisa boasts three world-class chefs It takes a small army to man the kitchen at Sunset da Mona Lisa, one of the most talked-about Italian restaurants on the Baja Peninsula. Three culinary experts oversee a team of 15 chefs. Thirtysomething Salvatore Messina hails from Milano, Italy, and is the youngest executive chef in Los Cabos. His unique talent and multicultural experience allow him to create signature dishes that are as exquisite as they are untraditional dishes. Messina graduated from ALMA, the world’s leading educational and training center for chefs and sommeliers working with Italian cuisine. He has worked alongside the most famous chefs from each region in Italy, cheffing in several Michelin-starred restaurants. At age 25, Messina moved to the United Kingdom, where he worked as sous-chef at London’s renowned Soho House. During this period, he learned how to merge traditional Italian flavors with the contemporary restaurant’s innovative techniques. His desire to learn more about artisanal cuisine brought Messina to México. In Baja, he found a peninsula with characteristics similar to the Mediterranean region. At Sunset da Mona Lisa, a restaurant known for its Italian fine dining, he found a new home. Two-star Michelin chef Gennaro Esposito joined Sunset da Mona Lisa this spring. Not only has Esposito changed many things on the menu and in the kitchen’s organizational structure, but he has also assisted in bringing is his right-hand man: Chef Paolo Della Corte has extensive experience in several Michelin-starred restaurants, including The Fat Duck, which was awarded three Michelin stars. —Sandra Berry FALL 2013 | LOS CABOS MAGAZINE 95 Salvatore Messina Gennaro Esposito Paolo Della Corte Francisco Estrada
