Just drop your catch, and they will fire it up in all different types of ways: grilled in the open fire mesquite grill, fried, Veracruz, garlic, ceviche, and  blackened. The business started as a restaurant for the first fishing adventures in Cabo.  The bartender’s margarita, made with Hornitos tequila, Cointreau, and cranberry juice is a must-try! El Meson Seafood is the specialty of the house at this gorgeous restaurant, an on-site option for guests (and the public) at the made-over Hilton Los Cabos. During our visit, we opted to try two ceviche dishes for starters: “Coco” (made with a selection of seafood, coconut milk, cilantro, habanero, and mango, then served with plantain chips) and Vuelve a la Vida (a combination of seafood in a pico de gallo and avocado sauce), both outstanding.
