The French kitchen maestro evinces a deft touch with regional masterpieces of Mexican cuisine like mole poblano, chile en nogada, and cochinita pibil, as well as showcasing his brush strokes with a generous array of steak and seafood specialty dishes. The mixed seafood platter for two is a popular choice with couples, who can share tasty bites of shrimp, clams, and fresh catch of the day as roving balladeers provide a romantic backdrop; and the camarones al aguardiente is a tour de force of Baja-style shrimp sautéed in garlic and guajillo sauce.
