Roasted and peeled Poblano pepper stuffed with sautéed meats, seeds and dried fruit, served with afresh cold walnut & sherry cream sauce. One of Mexico’s finest; Mole Poblano.- Masterpiece of the Mexican cuisine savory dish of chicken covered in a rich sauce of dried ancho, mulato & pasilla peppers; a multitude of seeds, spices & a hint of chocolate. (approx. 35 ingredients) A feast for your palate!; Pescado TikinXic.– Basted in achiote (ground annatto seeds, spices, tomatoes) & grilled in a banana leaf; Costilla de Puerco en Salsa de Tamarindo.- Oven roasted sholder spare rib, smothered in a delicious smokey chile & tamarindo adobo. A great sweet & sour flavor. Served with fresh cilantro mashed potatoe, beans & guacamole.
