There’s an undeniably charming quality that pervades María Corona. The restaurant, part of the übersuccessful Baja Cantina restaurant group, is open for lunch and dinner daily, but nothing compares to the setting come nightfall. Dine under the stars and trees lined with twinkling lights, as music wafts through the patio. Or retreat inside the impressive palapa-covered dining hall. Either way, you will enjoy classic Mexican at its best, made with recipes crafted long ago by the owner’s México City–born grandmother. The signature cactus margarita is one of a kind, and the perfect way to begin your alfresco dinner. There are several items prepared tableside; try them all. The queso fundido (freshly prepared melted cheese with chorizo, corn, epazote, and mushrooms) is a fiery show and delectable appetizer. The guacamole is quite possibly the best in Los Cabos. For an only-in-México experience, order the chamorro de cerdo (pork shank), cochinita pibil, or shrimp in sweet-’n’-spicy mole. Save room for the home-style desserts.
