María Corona – Los Cabos Magazine #37

maria-corona-MV-IMG_0061-1This spring, María Corona celebrated its fifth anniversary. The accomplishment was made possible thanks to the traditional Mexican eatery’s stellar pedigree—it’s part of the Baja Cantina family of restaurants—as well as a lovely setting in downtown Cabo San Lucas and a menu of recipes crafted long ago by the owner’s México City–born grandmother. Dine under the stars and trees lined with twinkling lights, as music wafts through the patio. Or retreat inside the impressive palapa-covered dining hall. Either way, you will enjoy classic Mexican at its best. The signature cactus margarita is one of a kind, and the ideal way to begin your alfresco dinner. There are several items prepared tableside; try them all. The queso fundido (freshly prepared melted cheese with chorizo, corn, epazote, and mushrooms) is a fiery show and delectable appetizer. The guacamole is quite possibly the best in Los Cabos. For an only-in-México experience, order the chamorro de cerdo (pork shank), cochinita pibil, or shrimp in sweet-’n’-spicy mole. Save room for the home-style desserts. But note: While flan is ubiquitous on many a menu in México, it is rarely so well executed. Visit the website to learn about cooking classes. Live music Mon–Sat. Free Wi-Fi. 16 de Septiembre (between Morelos and Leona Vicario), Cabo San Lucas, (624) 143-1111, www.bajacantinagroup.com. Daily noon–midnight. MasterCard, Visa, and vouchers accepted. $–$$$ A.A.
