Come to El Tapanco for the views, and you’ll fall in love with everything Casa del Mar Golf Resort and Spa’s El Tapanco signature restaurant has to offer. Here, the Sea of Cortés vistas are made all the lovelier when paired with a full-service Mexican menu and some of the best service I’ve ever experienced. Executive chef Humberto Espino is a Zacatecas, México, native whose creativity and care are served up table by table. A professional chef for the last decade, he first joined El Tapanco two years ago as a pastry chef. It’s no surprise, then, that the desserts are delicious. The bread is fresh and crunchy. And the whole menu wows with its traditional Mexican dishes that are prepared with organic, locally sourced ingredients. Among the must-try dishes is one of Espino’s favorites: The traditional wedding roast features mole, rice, and beans. Other popular dishes include a seafood tostada featuring the unexpected combination of shrimp, fish, octopus, scallops and mussels; flamed mussels with coriander; and cochinita pibil. José Luis Madrigal serves as El Tapanco’s food and drinks manager, and he made special mention of the restaurant’s focus on serving local communities.
