The most addictive appetizer in all of Los Cabos may very well be the queso fundido—or melted cheese—at the aptly named Los Deseos on the Cabo San Lucas Marina. The name, for those who don’t know, means “the wishes” or “the desires.” And, indeed, the traditional queso fundido appetizer is all you could wish for: It’s made tableside in a volcanic rock, then doused with tequila and served alongside handmade tortillas.
