Chef and co-owner Chris Shuler is said to have invented coconut shrimp in the late 1970s while apprenticing under a Cordon Bleu–trained master chef, and his most famous creation still satisfies: It’s a delicious pairing of fresh local camarones in coconut breading with a zesty, tropical mango dipping sauce. There’s plenty more to tempt hungry visitors to this downtown eatery, however, most notably the Gonzales, Texas, native’s hearty and delicious Tex-Mex specialty dishes.  Shuler’s chili is the best in Baja, and his “chicken fried” options are legion, ranging from appetizers like chicken fried bacon to entrées such as chicken fried steak.  The burgers and burritos are also excellent, as are the baby back ribs in homemade barbecue sauce. Local guitar ace Brian Flynn and band perform several times per week, and live music if offered during dinner hours Wednesday–Saturday.
