Forget EPCOT. For a glimpse of the world, stroll along the picturesque Cabo San Lucas Marina. Here, you’ll find Italian, Japanese, Spanish, American, and more. All are delicious, but to leave without sampling the Mexican offerings at Los Deseos would be an outright sin. The Mexican-born-and-raised chefs impress from the very first bite. Begin with the queso fundido, or melted cheese. It is without equal in all of Los Cabos. The traditional appetizer is made with three cheeses flamed table side in a volcanic rock, then doused with tequila and served alongside handmade tortillas. The queso fundido is a decadent start to a meal that is guaranteed to please on multiple levels. Tikin Xic is a Yucatecan-style fish fillet with achiote sauce wrapped in a banana leaf. The Aztec Huarache steak is a finely cut fillet with green chilaquiles and salsa on cactus leaves. And the jericalla is a Jalisco-style dessert that falls somewhere in between between crème brûlée and flan.
